About This Recipe

Haldi roti is the everyday wheat roti with turmeric powder worked into the dough, so the flatbread comes off the tawa golden instead of cream. It needs no special technique: the powder goes into the flour before the water, the dough rests as usual, and the rotis are rolled and roasted like any other.

The turmeric is stirred through the dry flour first, which spreads the colour and taste evenly; added to wet dough, it streaks. A teaspoon of turmeric (3 g) in 240 g of atta is about 12.5 g per kilogram, mild enough that the wheat taste still leads. The dough takes a tablespoon of ghee, which keeps it soft, and the remaining ghee is smeared on the rotis as they roast. Each roti uses 30 g of flour, rolled thin so it puffs over the flame. Leave the ghee off the tawa for a plain phulka; the roti is still soft from the ghee in the dough. For more on the spice, see haldi.

Serving Suggestions

Tips for Cooking Turmeric roti (haldi roti)

Knead the dough soft and smooth; a stiff dough gives dry rotis. Rest it the full 15 minutes, or the rotis shrink back as you roll. Roll evenly and thin, and keep the tawa properly hot so the rotis puff. Smear the ghee while the roti is still on the tawa; it soaks in better than ghee dabbed on later.
