About This Recipe
Besan laddu is the North Indian sweet of gram flour roasted in ghee and bound with jaggery or sugar. The haldi laddu is its turmeric-forward version: the same soft base with turmeric powder stirred through it, golden all the way through.
This version roasts the besan until it smells nutty and turns a shade darker, warms the turmeric through in the last 30 seconds, then adds the jaggery and cardamom once the mixture is warm to the touch. The warm ghee and the jaggery powder are the whole binding; there is no sugar syrup to boil or test, yet the laddus hold their round shape once set. Keeping the turmeric to the last half minute colours and flavours the laddus without scorching it in the pan.
The laddus come out soft, faintly grainy where the jaggery sits, with the earthiness of haldi cut by cardamom. Grated jaggery cubes work in place of the powder. Leave the cardamom out for a plainer laddu, or stir a tablespoon of chopped nuts into the mixture before shaping.

Tips for Cooking Haldi laddu (turmeric laddu)
Roast the besan on low to medium heat and keep the spatula moving; it darkens fast in the last minute and a burnt batch cannot be rescued. Cool the mixture to warm, not hot, before the jaggery goes in, or the jaggery melts into syrup and the laddus turn sticky. Roll while the mixture is still warm, and keep the bowl covered with a plate between laddus so the rest does not dry.

Chef’s Note
The bind comes from the warm ghee holding the jaggery powder as you mix; if a ball crumbles, warm the bowl over low heat for a minute and try again. Each laddu carries about 0.6 g of turmeric. The count below is per laddu, from the besan, ghee, jaggery and turmeric.
