About This Recipe

Haldi pani, or turmeric water, is a plain everyday drink: turmeric powder stirred into warm water, taken warm or at room temperature. The base glass is just those two, and homes make it three ways: plain, with a squeeze of lemon, or with a grind of black pepper. This recipe does all three, plus a teaspoon of honey in each glass.

The water is warmed only until it steams, not boiled, and the turmeric is whisked in off the heat. That keeps the drink mild and the powder evenly suspended instead of settled in a gritty layer. One teaspoon of honey (7 g) puts 5.8 g of carbohydrate into the glass; a teaspoon of jaggery powder (5 g) puts in 4.2 g. Leave the honey out and the glass comes to about 3 kcal. Tips for Cooking Turmeric water (haldi water)

Warm the water only until it steams; once it boils, the powder clumps and the drink tastes harsher. Whisk the turmeric in off the heat and stir the glass before every sip, because the powder settles within minutes. Grind the pepper fresh, and sweeten in the glass so the pan stays clean.
