About This Recipe
Biryani is rice and a spiced masala cooked in layers under a sealed lid, the dum method that steams every grain in its own spice. In this vegetable version, the masala is mixed vegetables cooked in curd, and the top layer of parboiled basmati rice finishes above it, soaking up the steam without turning mushy.
The trick is parboiling the rice to three-quarters done and layering it over a masala that is already thick, not watery. The vegetables then give up their juice to the rice above, and the sealed dum cooks both together without a stir. Whole cinnamon, cloves and bay leaf go into the rice water, so the fragrance rises through every grain; a quarter cup of milk poured over the top layer keeps the uppermost rice soft.
Swap the vegetables for what is in season; cauliflower, beans, carrot, peas and potato are the classic mix, and paneer or tofu cubes can go in for more bite. A pressure-cooker biryani is quicker, but it steams rather than layers and the grains come out less separate; the dum rest is what keeps them long. Add a splash of rose water or kewra to the milk for a special-occasion pot.

Serving Suggestions
Serve straight from the pot with a bowl of onion or boondi raita, a lime wedge and a little pickle; papad on the side is optional. Scoop deep so each plate gets rice, masala and vegetables together. Leftovers keep up to two days in the fridge and steam or microwave back to softness the next day.
Tips for Cooking Vegetable biryani
Parboil the rice to three-quarters done: a grain pressed between finger and thumb should flatten but keep a firm white centre. Drain it the moment it reaches that point, or it will carry on cooking. Do not stir once the layers are in; the dum does the mixing. Keep the flame at its lowest and the lid sealed, and never open the pot before the rest is over.

The dum is cooking, not resting: the sealed pot steams the top layer while the masala finishes below, so the minutes under the lid are what separate a biryani from spiced rice and vegetables.
