About This Recipe

Panjiri is the Punjabi winter mix: whole wheat atta roasted in ghee until it smells nutty, sweetened with sugar and studded with nuts. It is eaten by the spoonful, plain or with warm milk, a small amount at a time, which is how a dense mix of ghee and sugar is meant to be eaten.

The atta is the whole dish: roasted slowly in ghee until light brown, because the roasting is where the flavour comes from. Sugar and crushed nuts go in off the heat, and the mix is spread on a wide plate to cool, so it stays loose and spoonable rather than clumping into lumps.

For dhania panjiri, roast two tablespoons of coriander seeds along with the atta and crush them in before the sugar; it is the sharper, more aromatic version. Serving Suggestions

Eat panjiri by the spoonful with a glass of warm milk in the morning, or sprinkle it over warm milk as a quick winter breakfast. A spoonful beside a cup of chai works as a small sweet. It keeps in an airtight jar for weeks, so make it once and spoon it out all season.

Tips for Cooking Panjiri

Roast the atta low and slow; the smell turns from raw flour to toasted nuts when it is done, and that is the moment to stop. Stir in the sugar off the heat, or it melts into a sticky lump. Cool the panjiri on a wide plate and stir it once in between, so it stays loose. The hot pan keeps cooking the atta after you think you have stopped.
