Podi is the coarse chutney powder South Indian homes serve with idli and dosa; on English menus it is often called gunpowder, milagai podi in Tamil. The classic mix is roasted red chillies ground with dal and sesame rather than chillies alone, with ghee or sesame oil stirred in only when it is served.

This idli podi recipe keeps to four dry ingredients and roasts them one after another in the same pan, in the order their cooking times need: urad dal first, then the whole dry red chillies, then the sesame with the hing. Whole tadkalal chillies bring strong heat, the roasted dal and sesame a nutty taste, and the coarse grind a little crunch. With no oil in the mix, the powder stays dry and keeps for months in an airtight jar.

For a milder podi, use Kashmiri red chillies in place of tadkalal, or roast fewer chillies; the steps below show how to seed them. Some kitchens add chana dal or a few curry leaves to the roast, which changes the taste and the crunch. Serving Suggestions

Stir one teaspoon of podi into a teaspoon of ghee or cold-pressed sesame oil and pour it over hot idlis, or dip pieces of dosa straight into the dry powder. Sprinkled over hot rice with a spoon of ghee it becomes a quick meal, and mixed with a little oil it doubles as a chutney for upma and pongal. Keep the jar beside the stove; it gets used at most meals.

Tips for Cooking Idli podi

The one-pan order is the method: urad dal roasts for about four minutes, the chillies about three, and the sesame under two before the pan leaves the heat and the hing goes in. Stir without a break; one scorched patch can make the whole batch bitter. Cool the roast completely on a wide plate before grinding, or the warmth turns the powder pasty.
