About This Recipe

Khapli atta is the flour of emmer wheat (Triticum dicoccum), a heritage wheat that COWBERRY sources from Maharashtra and Madhya Pradesh and stone-grinds. The flour itself is nutty and earthy. For the grain's story and its other uses, the khapli atta guide is the place to start; this page stays with the loaf.

Bread dough needs strong gluten to hold a rise, and khapli atta alone tends to give a dense, crumbly loaf. This recipe keeps khapli atta at two of the three cups and adds one cup of sharbati atta, so the dough rises well while the bread keeps the nutty, earthy taste of khapli and a chewy crumb. Many emmer wheat bread recipes rely on a sourdough starter; this one uses plain yeast, so the schedule stays simple: one long first rise, one short second rise, then the oven.

For a fully khapli loaf, use three cups of khapli atta and add two extra tablespoons of warm water; expect a denser bread that needs the full rise time. For a lighter, taller loaf, use two cups of sharbati atta and one cup of khapli atta. Honey can replace the jaggery powder measure for measure.

Step-By-Step Recipe

Serving Suggestions

Toast thick slices and smear them with ghee, or grill a sandwich of cucumber, tomato and mint-coriander chutney. The loaf also makes sturdy French toast. The loaf keeps for up to two days in an airtight box at room temperature; refresh slices in a toaster. Tips for Cooking Khapli atta bread

Rise the dough in a warm, draught-free spot: a switched-off oven with the light on, or a corner near a warm stove, works well. Spoon the flour into the cup and level it instead of scooping, so the dough is not dry. Flour the counter lightly while kneading; extra flour makes a dense loaf. Preheat the oven for at least 15 minutes before the loaf goes in.

Chef’s Note

A slice of this loaf comes to about 148 kcal and 4 g of fibre. Because IFCT 2017 has no emmer entry, the flour is counted with its whole wheat values, and the jaggery and oil from their own entries.

Per serving (approx.): 148 kcal, protein 3.8 g, carbs 25 g, fat 3.5 g, fibre 4 g. Computed from IFCT 2017 / USDA values for the listed quantities. Measures: 1 cup = 240 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml.
